Good quality blue cheese can be used to make an amazing sauce for your steak. This is a reasonably simple recipe which will lead to a wonderful meal.

Blue cheese sauce for steak is tasty, but obviously make sure that your guests like strong cheese before you make this for them.

The sauce and the steak can be made alongside each other in this recipe.

You will need:

Oil or butter for frying
100g blue cheese. You can use any type of blue cheese that you like. Gorgonzola, Roquefort and Blue Stilton all work well
3 chopped garlic cloves
1 teaspoon of crushed pepper corns

How to cook blue cheese sauce for steak

In one saucepan, add about 100g of crumbled blue cheese, 3 chopped garlic cloves and a teaspoon of crushed pepper corn. Gently heat until the cheese has melted. It is really as simple as that to make this sauce. Once the cheese has melted, it is then just a question of removing the pan from the heat and keeping it warm.

You can use any type of steak that you like for this blue cheese sauce recipe. Fillet steak is always nice, but clearly it is expensive. Rump steak is straight forward and sirloin or rib eye would all work perfectly well too.

Now fry your steak pieces in some hot vegetable oil or butter. Note that we are using vegetable oil rather than olive oil for the steak. Olive oil doesn’t get hot enough to sear the steak nicely.

Cook for about 2 minutes on each side for rare, 4 minutes on each side for medium and 6 minutes on each side for well done. Turn down the heat a bit after the first 4-6 minutes to avoid burning the outside.

Then it is very important that you set your steak aside and keep them warm to let them rest. for about 5 minutes. This resting process will help make sure that the muscles inside the meat relax and are far more tender to eat afterwards.

Scrape any tasty brown bits from the pan into your cheese sauce, warm it up again gently and then pour the sauce over your steak.
You can now enjoy a delicious blue cheese sauce with your steak. In reality, although we have recommended blue cheese, there is no reason that you could not use any type of cheese that you have available.
